Which would you pick and why — and what one question would you ask the employer before accepting (pay structure, sample commission calculation, or typical week schedule)?

I’d look if they put the pay range and spiff structure in writing — ‘provide clear, written estimates’ is great for customers, but , I’ve been burned when commissions weren’t itemized per ticket. In my last residential gig we used flat-rate menu pricing tied to the tech’s commission sheet; @OP, does McHales pay spiffs on collected or on sold, and do they use flat-rate?
